This recipe also works great gluten-free. Just substitute gluten-free pasta for the whole wheat and Ta-Da!
Hatch Green Chili Mac & Cheese

One of my favorite recipes. A one pot wonder! Trader Joe's is my go-to for all these ingredients.
- 1 lb Whole wheat pasta
- 3 tbsp Butter
- 3 tbsp Brown rice flour
- 2 cups Almond milk, unsweetened
- 1/4 tsp Turmeric
- 1/2 tsp White pepper
- 1/2 tsp Chipotle chili powder
- 1/4 tsp Cayenne
- 1 tsp Salt
- 1 tsp Pepper
- 1 cup Hatch green chilies (Trader Joe's)
- 1 cup Sharp cheddar cheese, shredded
- 1 cup White cheddar cheese, shredded
This one pot wonder is so easy. Cook pasta al dente. Set aside.
In sauce pan, melt butter. Add rice flour and stir for 2 minutes over medium heat. Add almond milk and bring to slow boil. Remove from heat. Stir in all spices and add chilies and cheese. Stir until cheese is melted and sauce is thick. Add pasta back into the bowl. Stir to combine.
Top with toasted bread crumbs or drizzle with fresh pesto. Enjoy!
